I have been thoroughly enjoying my transition to a plant-based diet. However, there have been some bumps along the way and some things I was really sad to say goodbye to. Chicken broth has always been a staple in my pantry. I make a lot of soups where I use it as the base. Vegetable broth just doesn’t always work.
As I was reading one of my new cookbooks, Viva Vegan, the author noted that there is a chicken-flavored vegetable broth available. Imagine my delight! I found Better Than Bouillon Vegetarian No Chicken Base and I love it! It’s kind of like a loose paste that dissolves so easily in water (unlike bouillon cubes). In addition to using it for soups I also use it to add more flavor when cooking whole grains. Check out how I used it with quinoa.

Believe it or not, it’s $1.00 cheaper at Whole Foods…
I’m looking forward to giving this a try. I only hope it’s not too high in sodium.
It’s pretty high in sodium in its concentrated form. However in most, if not all uses, you’re diluting it with some liquid.
