Yes, this site is so far heavy on the rice dishes. That’s because if it wasn’t, it would be heavy on the pasta dishes. Part of my FOKLife conversion is the goal of never being hungry. Rice and pasta deliver on this goal. It’s not the end goal however, as I know that ultimately I need to be incorporating a MAJORITY of whole foods into plan. But this is my path…walk with me a bit.
This recipe is essentially a spin off of the Arroz Con Soy-O, minus the chorizo, minus the brown rice, add the wild rice. Most of what you read about Wild vs. Brown rice point to wild as the better option, (i.e. per serving wild rice has more protein, few calories, twice as much fiber as brown rice.) I simply like it for its color and texture. Doesn’t seem that you can overcook it, which is probably helpful for some of us who don’t watch the stove enough…
